Many people ask me about the reason for pub-
lishing Coffee t&i which was developed from
Coffeetalk or the News letter of K2, the company
which provides specialty coffee house consult
and supply. It seems that I have not announced
my intention to create Coffee t&I; therefore, I am
going to take this opportunity to briefly define
the objectives of our magazine.
From my experience in food service busi-
ness in Asia during the last 20 years, I have seen
the growth of hotel, fast food restaurants and cof-
fee houses business. Particularly, I myself have
been studying and doing coffee business for 7
years and I have realized from the very first time
I entered this business that there have not been
enough books about coffees. From the coffee
plantation, coffee roasting, coffee preparation,
Starting and marketing for coffee house business
are very rare. Most of the books about the afore-
mentioned topics are written in English, Japanese
and Chinese (from Taiwan); however, they are
so interesting that I want to produce this kind of
books. As a result, the two pocket books Coffee

ซึ่งฝังราก
ลึกจนกลายเป็นวัฒนธรรมไปแล้ว
การทำหนังสือจึงเป็นแนวทางที่ผมเล็งเห็นว่าจะเป็นการให้ความรู้กับ
คนในวงการกาแฟทั้งผู้ประกอบการและผู้บริโภค
และการทำเป็นนิตยสาร

ผมจึงตั้งใจจะทำ

งานการแข่งขันบาริสต้าระดับเอเชียขึ้นเป็นครั้งแรก
ซึ่งมีเนื้อหาอยู่ภายใน
เล่มนี้แล้ว
Times 1&2 have been published and generally accepted.
During the First coffee booming in Thailand 20 years ago, I
have seen the rise and fall of many coffee house business. One of the
key factor is because of the lack of adequate and efficient knowledge
of both the coffee house owners and the consumers. For this reason,
the coffee house business cannot root itself through the culture the
way it has been in Japan and Taiwan.
Therefore, publishing books, in my opinion, is a way to edu-
cate people in this circle, both coffee house owners and consumers.
Although there are a number of coffee magazine launched around
the world, but not one of them work as a medium of communica-
tion among coffee people and baristas in Asia. My aim is to create
CT&I to be the medium of coffee knowledge and society of people
in coffee, tea and ice cream in Asia in order to expose our stories
and abilities to western world and to exchange the knowledge and
experience which will play an important role in the long-term devel-
opment of coffee business.
Therefore, the intention to promote our group’s products
through CT&I is not the priority. As same as our sponsors, Without
their supports, we are not able to contribute CT&I to our goals. We
serious for this business which you can see from many books we
plan to launch this year.
I would like take this opportunity to invite all professionals
who are involved in coffee, tea and ice-cream business at any sec-
tion, from production process to roasters, baristas, sales and market-
ing, to share your knowledge and experience by contributing your
articles to us. I would be impressed to receive your piece of writing.
Last, but not least, I would like to thank you, the sponsors and read-
ers, who have been such a great support to all of us.
During the last few months, there have been a number of
barista competitions in many countries. The champion from each
country is to attend the World Barista Championship, held in Co-
penhagen, in June. It is a pity that not every country in Asian is at-
tending this competition; however, I hope that within 2 years there
will be 10 baristas from Asian on the stage in the World Barista
Championship.
For now, the cover story of this issue is taking you to the 1st
Asian Barista Championship held in Singapore. Hope you enjoy it.

He is an Australian Master Coffee Roaster & Wholesale Manager. Ross joined Dome Coffee of Aus-
tralia and Spinelli Coffee Company’s Singapore office in 2001 as a coffee roaster. He is in charge of
purchasing all green coffee and he roasts the beans weekly to maintain the quality of coffee served
in Spinelli’s 25 stores in Singapore, Beijing, and Jakarta. He travels extensively to Malaysia, Thai-
land, Indonesia, Mexico, Costa Rica, Japan and etc to judge in their local barista championships.
In August 2007, he judged in the World Barista Championship in Japan.

Lydia Delights Coffee Lovers in “Kwa Ja Pen Dao”
When Lydia Sarunrat Visutthithada, was asked about what else she would like to
do besides being a singer, she answered with no hesitation that she also wanted
to be a barista. Kwa Ja Pen Dao, the TV program on channel 9, managed to make
her dream come true by providing Lydia and her friend, Jui Warattaya Nilkuha,
with an intensive espresso brewing and latte art training at K2. Both Lydia and Jui
have shown us that they are not only a singer and an actress, but they can also be
wonderful baristas.

As the first barista competition held in Asia, Asia
Barista Championship, held in Singapore during April
22-25, 2008, can be considered as a success story. The
number of competitors from 11 countries and observers
who stayed from the beginning until the end perfectly
guarantees this accomplishment. Therefore, Cover Sto-
ry cannot miss this chance to provide our readers with
useful information about barista competition and lead
you into Asia Barista Championship 2008
Asia Barista Championship or ABC is a competi-
tion held to seek to recognize baristas as professional
career and to draw attention to specialty coffee and cof-
fee culture. In the meantime, the competition provides
all baristas with the opportunities to learn new tech-
niques and develop their skills. Moreover, Baristas are
able to establish a friendship between one another and,
as a result, the coffee community is firmly expanded.
Asia Barista Championship is co-organized by
Singapore Exhibition Services, Kerry Ingrdients Asia
and Singapore Coffee Association and sponsored by
La Marzocco, DaVinci Gourmet, Greenfields, Hamil-
ton Beach Commercial, Coffex, Mahlkonig, Cafetto,
so interesting that they could not leave the stage area.
At the end of the day, the final 5 participants were an-
nounced. Not only the final participants, but also the
audiences were excited about the competition on the
following day. They could not wait to see the perfor-
mance in the final rounds which would be even more
intense.

the judges gathered together once again in the competi-
tion area in the morning. Although there were fewer
barista performing in the final competition, the number
of people circling round the stage did not decrease. On
the other hand, the competitors who did not get into
the final round were also in front of the stage in order
to give the final competitors a cheer. This picture clearly
showed the friendship among the participants and it
cannot be destroyed by the competition.
The final stations of the Asia Barista Champion-
ship 2008 turned out to be a major success, when all the
final competitors were well-prepared and give the audi-
ences with their best performance, both in the brewing
and in the presentation. One of the baristas who was

The real competition of Asia Barista Champion-
ship 2008 began in the morning of April 23, 2008.
Besides the judges and the competitors, a number of
audiences who were interested in this competition from
different countries circled round the stage. Many of the
audiences were baristas who wanted to increase the
knowledge and experience in their professional field,
while others were involved with coffee by either profes-
sion or pleasure.
In Asia Barista Championship 2008, there were 7
judges, consisting of 4 sensory judges, 2 technical judg-
es and 1 head judge. In each station of the competition,
each barista had 45 minutes, divided into 3 segments,
15 minutes of preparation time, 15 minutes of com-
petition/performance time, and 15 minutes of clean-up
time. For the preparation, the barista carried all sup-
plies on stage, set up and prepared the bar including
the judges’ table. During the competition/performance
time, each competitor had to serve four sensory judges a
single espresso, a single cappuccino and a single blend-
ed signature beverage of their choice making a total of
12 drinks within 15 minutes. After serving the drinks,
the barista spent 15 minutes on cleaning up the counter
and the machines. All these actions are under close ob-
servation of technical judges and the head judges.
