In June 2008, the coffee community has discovered the new best
barista of the World from the World Barista Championship (WBC),
the competition which has been annually held for 9 years. The in-
creasing number of the competitors from the 1st WBC in Monte
Carlo which was attended by 12 national champions to the 2008
WBC which gathered 51 national baristas in Copenhagen, Den-
mark, has shown the increase of world-wide baristas’ interest in this
competition.
However, out of 10 South East Asian countries, only Singa-
pore and Thailand sent their representatives to 2008 WBC this year.
This was partly due to the economic and political problems which
had an effect on business owners. On top of that, there was a lack
of financial support from suppliers. Some countries don’t have the
organization such as coffee association to organize the event. Some
that have the association still don’t get enough support of the mem-
ber because of distrust among them.
One more comment on this is that most of the barista champi-
ons from Europe and America came from small coffee companies or
independent coffee houses, while most national barista champions
from Asia such as Singapore, the Philippines, Indonesia and Thai-

coffee, Tung-Yuan Lin has been in coffee
society for 11 years. In November 2004,
his dream came true when he has decid-
ed to open an Italian-styled coffee house
of his own with the knowledge and the
techniques he had acquired. The coffee
house was named GaBee.. Moreover, in
the same year, he won the barista com-
petition in Taiwan for the first time. He
kept up good work and won the same
price for the second and the third time. In March 2006, he was invit-
ed to be a judge in the Thailand Barista Championship, while he was
the first barista from Taiwan who attended the World Barista Cham-
pionship. The books written by Tung-Yuan Lin are “GaBee. Latte Art”
and “GaBee. the Coffee Champion”. Nowadays, besides owning a cof-
fee house, he also does a consultation work for those who would like
to start a coffee house business. In addition, he also tries to introduce
Italian-styled coffee to the newcomers.

coffee began while a student at the Uni-

him at UC Berkeley, where many of this
country’s most accomplished coffeemen
have set up shop, allowing ample opportunity to continue cultivat-
ing a coffee palate. Each year, extensive travels to farms throughout
Central and South America, Africa and Indonesia, alongside new re-
lationships with farmers, exporters, and specialty coffee importers
throughout the world continue to provide insight and understanding
of what it is that makes coffee extraordinary.

land came from the big chain coffee houses. This is probably where
the rumor about the unfair judgment among the judges came from.
However, the truth is that big chain coffee houses are more inter-
ested in Barista competition. They spend a lot of time and money
on training their baristas and they have a team to work on the coffee
blending and the creation of signature drinks.
In addition, we lack baristas from independent coffee houses
who have enough passion (and enough money) like Hiroyuki Kad-
owaki, the first runner up of WBC 2003 from Japan, and Tung-Yuan
Lin, 2-time Taiwan Barista Champion, who could buy the same cof-
fee machine (used at WBC), create the competition stage at home,
and practice every day for months before the competition.
I believe that this thing will happen if we continue to have
Barista competition in each country and get support from the related
coffee business. We, Coffee t&i, are willing to support of any barista
competitions in Asia via media so that one day the World Barista
Champion might be the one who comes from one of ours.

National barista champions from 50 countries gath-
ered in the 2008 World Barista Championship held
during June 19 – 22, 2008, in Copenhagen, Denmark.
Besides being considered one of the most important
events of the year, WBC is also considered a chance for
people in coffee society from every part of the world to
meet one another, to talk about the good old days, and
to update what is new. No matter who they are in the
event, every one of them should be able to sense the
warmth of friendships among their professional friends,
but this year competition can never be more fun and
intense either. Therefore, Cover Story is presenting you
a tour of the biggest international barista competition,
2008 World Barista Championship.
Since the 2008 World Barista Championship was
held in conjunction with the SCAE’s Wonderful Coffee
event which was the exhibition gathering a number of
coffee product manufacturers from all over the world,
the exhibition visitors were so delighted with the vari-
eties and innovations of the products that they never
got bored. However, besides the international exhibi-
tion, the heart or the highlight of this event was the
2008 World Barista Championship. This year WBC was
sponsored by La Marzocco, compak, Monin Gourmet
Flavorings, PROBAT, Clover, Cafetto, Urnex, Bunn,
Espresso Warehouse, Counter Culture Coffee, Intelli-
gentsia Coffee and Tea, Estate Coffee, Cirqua Custom-
ized Water, Coffee Collective, Caffitar and Georgia Pa-
cific. A number of people in front of the stage made the
gigantic hall look smaller than ever.
The competition was divided into 2 rounds, in-
cluding a select competition and a final competition.
Although the first 3 days of this competition were a se-
lect competition, the competition was very intense and
interesting. Seeing the audience from the stage, one
could see, on the grandstands, many groups of people
with different flags to represent their countries waving
with no rest. Not only the European people appeared in
2008 World Barista Championship
front of the stage, but also people from Asia such as Thai
people who lived in Denmark who had been inciden-
tally informed about the competition, Japanese people
and Chinese people who sat on the next grandstands.
Besides the people on the grandstands, there were also
those who had been looking forward to watching the
2008 WBC via the website. Therefore, this competition
could be considered one of the most-watched barista
competitions.
In the 2008 WBC, there were 7 judges, including
one head judge, 4 sensory judges and 2 technical judg-
es. Although the head judge did not have any points to
give to the competitors, he was the one who supervised
the whole process of the competition and made sure
that everything was properly and fairly done. The sen-
sory judges were responsible for evaluating the taste of
beverages served, while the technical judges took care
of the evaluation of cleanliness, creativity, technical
skill and overall presentation of the competitors.
Within 45 minutes, each competitor had to pre-
pare 4 espressos, 4 cappuccinos and 4 original signature
drinks of their own creation to exacting standards using
state of the art La Marzocco FB/80 espresso machines
and Compak K-10coffee grinders. The first 15 minutes,
or the preparation period, was spent on preparing the
machine and other tools including the table for the
judge ready for the brewing to begin. The next 15 min-
utes, the performance period, allowed the competitor
to brew their coffee and do the presentation. The last
15 minutes after all the drinks were served, the barista
had to clean the counter and every item used during the
brewing process.
After the 3-day
