A brief introduction to Lijang Lijiang refers to an administrative division comprising of urban and rural areas in northwestern Yunnan Province, People's Republic of China. Its population is 1,100,000. The famous "Lijiang old town" (as it is commonly known) is more correctly called the Dayan old town . Lijiang City is a fairly large geographical area that comprises one district (the old town district) and four counties, including the Liijang new town, Dayan old town, Shuhe old town, Baisha old town, and parts of the Tiger Leaping Gorge. The Lijiang old town has a history going back more than 800 years and was once a confluence for trade along the old tea horse road. The Lijiang old town is famous for its orderly system of waterways and bridges. It has been called the "Venice of the East". The old town of Lijiang differs from other ancient Chinese cities in architecture, history and the culture of its traditional residents the Naxi people, therefore people there are called “胖金哥” and “胖金妹” (male and female respectively). One third of the town was destroyed by an earthquake in February 1996. Lijiang old town (including Dayan, Baisha and Shuhe) was registered on the UNESCO World Heritage List in December 4, 1997. Since then, the local government has taken more responsibility for the development and protection of the old city. - 3 - Lijiang's tourism also boomed, and travellers from around the world flooded in; although many locals fear that due to much of the development, the old town of Lijiang will lose its appeal. Recently, the government has started to develop additional "old city" sections adjacent to the site of the original old city. This is to accommodate the large number of tourists, particularly Han Chinese, who walk the cobblestone streets (cars are not allowed in the old city), typically as part of package tours. Evenings in the old city can be particularly rowdy, not least due to the many outdoor bars, where boisterous groups of tourists try to "out sing" other groups. Lijiang is a beautiful shining jewel on the Northwest Yunnan Plateau neighboring the southeast side of the Tibetan Plateau which is considered to be the "Roof of the World". It is impressive because of its scenery and lush vegetation. Lijiang boasts of breath-taking wonderful sights such as Jade Dragon Snow Mountain and its modern maritime glacier, the only one of its kind in the southern end of the Northern Hemisphere; Tiger Leaping Gorge; the world - famous grand canyon; Lugu Lake, the cultural cradle of the "Matriarchy" of the Yongning Mosuo people in Ninglang. Lijiang Town is officially called "Dayan Town"—"Dayan" literally means a "great inkstab", a graphic description of the town's location on a piece of rich flatland fed by a river and surrounded by green mountains. There is no other town in China like Dayan which incorporates the folkways of so many people and the architectural styles of both north and south China. The people of Naxi, while developing their land of snow-clad mountains and turbulent rivers since ancient times, have to their credit the "Dong Ba Culture" seen as one of the world wonders, a culture all-embracing while unique. All these natural sceneries and these cultural treasures of the minority peoples have been continuously drawing tourists from all over the world and have recently vote Lijiang as one of the favorite destinations in China. 4. Helping Tourists Enjoy the First Meal Procedures ?Informing the food and beverage depart of tourists' special requirements . - 6 - ?Ushering the tourists to the dining-hall. ?Arranging the tourists at the table. ?Toasting. ?Inspecting the dishes . A typical introduction speech Today we are going to taste Sichuan Cuisine.Sichuan Cuisine is one of eight famous regional cuisines. It is a style of Chinese cuisine originating in Sichuan Province of southwestern China which has an international reputation for being hot and numbing, because of the common ingredient Sichuan peppercorn or fagara. Sichuan food is famous for its many flavors, and almost every dish has its own unique taste. This is because many flavorings and seasonings are produced in Sichuan Province. These include soy sauce from Zhongba, cooking vinegar from baoning, special vinegar from Sanhui, fermented soy beans from Tongchuan, hot pickled mustard tubers from Fuling, chili sauce from Chongqing, thick, and well salt from Zigong. Here, the spicy flavor of Sichuan food has to be mentioned. The hot pepper was introduced into China from South America around the end of the 17th century. Once it came to Sichuan, it became a favored food flavoring. Sichuan has high humidity and many rainy or overcast days. Hot pepper helps reduce internal dampness, so hot pepper was used frequently in dishes, and hot dishes became the norm in Sichuan cuisine. Sichuan food has become the common food for most people in the area, especially since the dishes go well with rice. In this respect, Sichuan cuisine differs from Beijing cuisine, which was mainly for officials and nobility; Huai Yang cuisine, which was mainly for rich, important traders; and Jiangsu cuisine, which was mainly for literati. Typical, modern Sichuan dishes like twice C cooked pork with chili sauce, shredded pork with chili sauce and fish flavor, Crucian carp with thick broad C bean sauce, and boiled mat slices are common dishes eaten by every family. I'll introduce some of the famous Sichuan Cuisine to you during the meal .And treat yourself at home .Have a good meal . When flavoring foods, sometimes two or more flavorings are combined, and sometimes a hot fire is used to concentrate the extract from the dish to increase the intensity of the flavor, preserve the primary taste of the dish, remove unpleasant flavors, and increase pleasant flavors. Sichuan cuisine tends to use quick frying, quick stir frying, dry braising, and dry stewing. In quick - frying and quick stir frying, the food is fried over a hot fire and stirred quickly without using another pan. For example, it takes about one minute to stir fry liver and kidney to keep it tender, soft, delicious, and fresh. - 7 - The raw materials for dry braising are mostly fibrous foods like beef, radish, balsam, and kidney beans. These foods are cut into slivers, heated in an iron pot and stirred continuously. Flavorings are added when there is only oil left and the water has disappeared. When the dish is ready, it is dry, fragrant, crisp, and soft. Dry stewing is similar to stewing in the Beijing cuisine, but the primary soup or extract in the dish must be condensed over a low fire before the thick broad bean sauce or hot red pepper is added. No starch is used. When the dish is ready, it looks faddish, oily, and shiny and tastes delicious, crisp and soft. Typical dishes are dry stewed fish and dry stewed bamboo shoots. One of the popular dishes is Pockmarked Woman's bean curd (or Mapo Doufu in Chinese) which was invented by a Chengdu chef's pockmarked wife decades ago in the Qing Dynasty (1644-1911). The cubed bean curd is cooked over a low flame in a sauce which contains ground beef, chili, and pepper. When served, the bean curd is tender, spicy, and appetizing. Although many Sichuan dishes live up to their spicy reputation, often ignored are the large percentage of recipes that use little or no spice at all, including recipes such as "tea smoked duck". Toasting Before we start our meal, I wound like to extend, on behalf of China International Travel Service, and in my own name, our cordial greetings and best wishes to you, our distinguished guests from the other side of the Pacific. Everybody is here on time ,Thanks for your cooperation .Now I will lead you go to the restaurant to have breakfast .Today ,we are going to taste traditional Chinese breakfast .Follow me ,everybody ! A brief introduction to Chinese breakfast . It is said that "breakfast is the most important meal for people ".In China there are various kinds of breakfast .On Saturday or Sunday, Cantonese people like to go out for breakfast. They drink tea and have dim sum, which are little snacks, usually steamed, deep fried, or boiled. People in some areas of China (e.g., Yunnan) have noodles for breakfast every day. Most people eat various steamed or fried buns for - 8 - breakfast. In the morning it is very convenient to get various inexpensive and hot breakfast foods from street vendors. Porridge or congee made of rice is a common Chinese breakfast food. Almost everything for breakfast is hot, including soybean milk, which comes in different flavors. 8. On the coach to destination Procedures ?introducing the scenery along the way and answering questions from tourists . ?giving a sketch of the destination scenic spot Today I will bring you to the Lijiang Dayan Town. Maybe you are more familiar with the name "the ancient town of Lijiang". We will get there in a few minutes. So now I will give you a brief introduction of Lijiang. It is located in Lijing Prefecture in the Northwest of Yunnan province. The population of Lijiang Prefecture is over 1 million involving 21 nationalities, for example, the Naxi, Yi, Lisu, Pumi, etc. And later you will see the houses of Naxi people in the ancient town. Lijiang Prefecture is the major developing tourist area of Yunnan Province. It contains beautiful natural scene, unique minority amorous feelings, age-old minority cultures, and rich tourist resources. The scenic spots are mainly scattered in Lijiang County and Ninglang County. We can conclude them into:" two mountains, one town, one lake, one river, one culture and one folk custom.". Two mountains refer to Yulong Snow Mountains and Laojun Mountains, one town is Dayan Town, one lake refers to Lugu lake, one river is Jinsha river, one culture is Dongba Culture and one folk custom refers to the Moso people's custom, which we call the "Aixa". What does that mean? I will leave it to you to discover. So you see Lijiang, with its rich resources in plants and animals, the natural beauties and the amazing minority folk customs, attracts more and more tourists from home and abroad. Soon we will get the the Ancient town of Lijiang, it has a history of almost a thousand years. The scenes are unique and unconventional. It is one of the best-historical, cultural cities at the state level in China. It consists of three parts: Dayan 、Baisha 、Suhe . So why is it called Dayan? Because it is in the middle of Lijiang basin, and the Lijiang basin looks like a big inkstone, and in Chinese the pronunciation of that is “yan”. The Old Town of Lijiang was first built in Southern Song Dynasty and in 1253, Kublai (the first emperor of the Yuan Dynasty) was stationed here on his march into the south. In Ming and Qing dynasties, it became much larger. Lijiang is world renowned as an ancient city built in a simple and artistic style and scientifically laid - 9 - out. There is a square in its center. It was listed as a national historical and cultural city in 1986. The Old Town of Lijiang is surrounded by Lion Mountain in the west and by Elephant and Golden Row Mountains in the north. These mountains in the northwest shelter it from the cold wind. In the southeast, there are fertile fields, which are dozens of kilometers long. The city is favored with plentiful sunlight, an east wind and clear spring water which flows in three streams and reaches every family. The streets are paved with the local stone slabs, which do not get muddy in the rainy season and are free of dust in the dry season. Many stone bridges and arches in the city were built during the Ming and Qing dynasties. Orderly roads and lanes extend to four directions from the central square. Residential houses are made of timber; most have a screen wall in front and some have a quadruple courtyard. Local people plant flowers in their courtyards. The ancient traditional culture of the Naxi ethnic group is the Dongba culture, which is based on the Dongba religion. Most believers are skilled in medicine and the culture is passed on through literature and art. The Dongba language has more than 1,300 separate words, which are written in primitive pictographic characters. There are more than 1,400 types of Dongba scriptures written in these characters and they take up 20,000 volumes. The scriptures cover religion, philosophy, history, local customs, literature, art, astronomy, medicine, the calendar, geography, flora, fauna, dancing, painting and music. Lijiang has many historical relics. The Old Town of Lijiang is the most complete ancient town in China. Black dragon Pool, Wufeng Building and Lijiang mural paintings are very famous in China. Lijiang is the home of murals which were painted by people from Han, Tibetan and Naxi ethnic groups in the Ming Dynasty. They cover a total area of 139.22 square meters on 55 walls of Dabaoji Palace, Liuli Hall, Dabao Pavilion and other buildings. The largest is 2.07 meters by 4.48 meters and contains 600 figures. There are many traditional festivals for Naxi people, such as Sandu Festival, Torch Festival and Stick Festival on the 15th day of the first month of the lunar year, etc.The Old Town of Lijiang was included in the UNESCO world heritage list in 1997. 9. Sightseeing Procedures ?Telling the tourists the sightseeing route and how much time it nedded ?giving a vivid explanation of the destination scenic spot and answering related questions. - 10 - ?Helping the tourists take photos. ?Making sure the tourists have some time to have a rest on the way back . a vivid explanation of the scenic spot ?The Entrance Ok, everyone, this is the entrance of the Dayan town. Maybe you have already notice the couple of the mill wheels over there. Besides it is the Chinese Characters written by Jiang Zeming. And there is a eye-catching pillar, we call it the "Shuilong", which means the water dragon and indicates the wish to avoid the fire in the town. Let's get inside and see. The Dayan town is famous in China for its old and simple architectural style and the elegant art for the lay-out of the town. In the town the Yuquan river winds in many streams across the town and past all the houses. The roads here are parallel to the streams, and the door of each house is facing a stream. Whatever street and whatever lane you go in ,there is a small stream with small bridges across it here and there. As a saying has it : A house beside a stream with a small bridge across it makes a wonderful scene which you can only find here.” That’s why we regard Dayan town to be the “Oriental Venice”. ?Sifang Street Here we are. In the center of the ancient town, here is the Sifang Street. It is a place for country fair trades. Since ancient times, Sifang Street has been a collecting and distributing center of all kinds of products with travelers and traders going and coming everywhere. On a market day people of different minorities in their unique costumes come here to do business and make the place crowed and noisy. If you spend a whole day here, you can experience the poetic changes here. In the morning, the street stretch its arms and woke up; in the midday, it becomes a busy man; When the night comes, the light is on, it changes into a dressed young lady; And at night it becomes quiet and fell asleep. Why the street has a name of “Sifang”? There are two kinds of explanation, one is that the ancient leader in Lijiang named it with a meaning of “spread his power around”, and the other is that “Sifang” in Chinese means four directions, and the street has people and goods from every area. Dayan Town is quite different from the other ancient towns in China, no town walls around it. Do you know why? That has something to do with the name of the governor of the town at the ancient time, before I tell you the reason, let’s visit the governor’s place first, later you will know why there is no wall here. ?Shangri-La - 11 - In the year 1893, James Hilton described an eternally peaceful and quiet place among mountains in the East—— "Shangri-La" in one of his novels for the first time. In the novel "Lost Horizon", an English diplomat Conway and his brother Gorge scattered the English citizens and helped them leave the dangerous region. On their way home, their plane fell down into the mountain in the an region. Some lucky survivors were taken to Shangri-la where Conway found lots of fantastic things in such a state founded nearly 200 years ago, in which the local people lived up to more than one hundred years old and lived peacefully and harmoniously with the other people, animals and everything here. The place was called "Shangri-La" by the local folks。 James Hilton located "Shangri-La" in a mysterious valley which was surrounded by snowcapped mountains; near where there were snow-clad peaks, blue lakes, broad grassy marshlands, and lamaseries, Buddhist nunneries, mosques, Catholic Church, the human beings and the nature were in perfect harmony, several religions and varies of nationalities exited at the same time; the temples looked splendid in green and golden; though people contacted the outer world by caravan for a long time, many foreign experts and scholars had come here to investigate and remained much relics„„ Obviously, that is not only a beautiful scenery, but also a kind of artistic conception. With the novel and the film coming out, Shangri-La became very famous in western countries. Later, a Chinese named Guo Huonian used the name of this place and set up "Shangri-La" Hotel Group which has become one of the most successful hotel group in the world. At the same time, people didn't give up looking for the legendary Shangri-La. Up to the end of this century, they finally have found—— After inspecting and proving on many aspects, people found that Diqing Prefecture, the only an region in Yunnan, China, has striking similarity with what’s described in the tale regarding either on natural scenery or people’s way of living. Therefore, the name of "DiqingShangri-La" spreads worldwide. 10. Activities on the coach As a guide ,we need to entertain the tourists on long journey .If the bus trio last one hour or more ,guides can plan some appropriate on-bus games. There are many kinds of games we can choose . ?Sing local tunes for the tourists ?Teach passengers to sing typical and beautiful folk songs of the locality ?Tell stories and invite tour members to participate - 12 - ?Tell some jokes A mother mouse was out for a stroll with her babies when she spotted a cat crouched behind a bush. She watched the cat, and the cat watched the mice. Mother mouse barked fiercely, "Woof, woof, woof!" The cat was so terrified that it ran for it's life. It combines Taoist rites, Confucian ceremony, and literary lyrics, poetic topics and musical tones of the Tang, Song and Yuan Dynasties. The music is made up of two sections: Baisha Xiyue and Dongjing Yinyue. The former, is believed to be the music of the Yuan dynasty with a 200 year history; the latter, is a kind of music combining Naxi and Taoist backgrounds, introduced to Lijiang during the Ming and Qing dynasties. Incorporating three characteristics: ancient music pieces, ancient musical instruments and older musicians in its performance (most of the performers are over seventy), Naxi Ancient Music is also called “The Three Treasures”. Members of the bands are drawn from all kinds of occupations including teachers, artisans, farmers, butchers, clerks. The only way of instruction for the music is from master to apprentice. By listening to the music, one can not only enjoy the music itself, but also have a taste of ancient Naxi culture. The music reemerged in 1986 and started to be performed publicly in 1988.
