芝士白汁花椰菜的做法
Cauliflower Bechamel Au Gratin
Ingredients / 材料: 700 g Cauliflower florets
40 g Grated mozzarella cheese
10 g Grated cheddar or other hard cheese
Bechamel Sauce:
2 tbsp Butter
2 tbsp All-purpose flour
360 ml. Milk, heated
Salt and freshly ground white pepper
Ground nutmeg (optional)
Dried parsley

白汁:
2大勺 牛油
2大勺 中筋粉 360毫升 热牛奶 盐及现磨白胡椒粉 豆蔻粉 (随好) 干欧芹末
Method / 做法: Heat oven to 200C/400F. Generously butter a baking dish large enoug
h to hold the cooked cauliflower. Blanch cauliflower until tender bu
t still firm, about 10 minutes.
While cauliflower cooks, melt the butter in a pan over the medium hea
t. Add flour and whisk until mixture is smooth. Add the hot milk, con
tinuing to stir as the sauce thickens. Bring to a boil. Add salt an
d pepper to taste, and add a little nutmeg, if desire. Lower the hea
t, and cook, stirring, for about 3 minutes more. Remove from the heat.
Arrange cooked cauliflower flowerets in the prepared baking dish, sea
son with salt and freshly ground pepper, and cover with Bechamel. Spr
inkle grated cheese over the top. Bake in preheated oven until golde
n on top, about 25 minutes.
烤箱预热到200C/400F。取个能装下所有材料的烤盘,抹上牛油备用。花菜水煮
嫩,但是不要煮过软了,大约10分钟。
煮花菜这段时间可以用来准备白。牛油入锅,中火融化后,加入面粉搅匀。慢慢
倒入牛奶烧开。一边煮一边搅拌直到酱汁浓稠。加入盐和白胡椒调味,喜欢的话,
可以加入少许豆蔻粉。调低火候,继续边煮边搅拌约3分钟。熄火。
将花椰菜放进烤盘,洒上适量盐和胡椒,倒入白汁。表面铺上乳酪后入预热的烤
箱烘焙约25分钟直到表面金黄。
