Objectives of the Washington Metro system boils down to the following three points: by driving onto the tracks at the station transfer mode in order to alleviate traffic congestion; For those who will not or cannot drive the person with a better option than conventional public transit; Block highway ?选壶 壶的选用最好是续温力强的、稍大(比喝乌龙时大约两三倍),会比较好些 。原因是在第一、二冲之后的冲泡,应尽量在泡与泡之间进行,所以茶壶续温力不佳容易使温度造成很大差异。所以茶壶选择壁厚、壶盖口比例不要太大的。另外一提的,茶壶的出水最好流畅一点,有时置茶量太多,沸水冲入壶中需要马上倒出,所以出水不够快的壶会影响执壶者的操控能力。有人说「泥壶」比较好,我也用过一支泥壶,确实不错,可列为参考范围。 ?壶的现 前项中既然谈到了壶,就顺便说说壶的好处。泡潽洱一般使用壶、盖杯或茶娘(或瓷壶)三种,只有壶不是瓷器。香气细嫩、韵味柔韧、涩度不高、酸度不高、苦味不重者,建议使用瓷器(例如嫩沱、或称为云尖之类的),但是因为续温力问题,所以与壶冲泡出来的口感有差异。一般的老潽洱,如果用壶泡,通常会减少一些让人不愉悦的感觉,例如涩、苦、火气、单宁、酸…等等。如果一支常泡的新壶,大约半年就可以养成了。养成的壶冲泡起来会比较好喝。当然,四、五年以上的潽洱壶(部分物质会减少)与盖杯(茶叶的东西全部跑出来)的差异更大。这是我的经验,然而以前听过是因为茶壶的孔隙问题,欲知详情,可以问问壶界人士。 ?壶内留汤的特效 一般来说,第一泡水倒干,第二泡壶中的水留一些,大约十分之一(这是在第二泡将香味冲出来的状况,如果第三泡才能将香味冲出来,就在第三泡才开始在壶中留一点水,不要倒干)。如果真的够老的潽洱,不需开盖,严格说应该是不能开盖;会有些许涩味、酸味等的潽洱,在第二泡倒出并在壶中留点水之后,开盖大约半分钟到一分钟再把盖子盖上;比较重的涩味、苦味、酸味等的潽洱,开盖,壶口没有蒸汽时,用手指压壶身,若温度不会太烫手指可以摸五秒以上,再将壶盖盖上。壶中留点水,主要让冲泡出的东西溶解在水中;温度要控制,因为这是主要的冲泡。停壶时间就是冲泡(浸泡、浸茶)的时间,所以,这段时间要控制好(如果将温度设定的比较高就需要战战兢兢),茶汤才会显现出该有的风味。所以,除非置茶量太多、温度太高,否则不应立即冲下一泡。 ?适时出汤 以第二泡冲出香味为例,第三泡冲沸水,随便就好,除非一定需要很高的温度。浸泡时间,可以用白瓷汤匙身进壶中看看汤色,颜色差不多就可以倒出,一般在倒出时就可以看出颜色,颜色不够时,再等一会儿,不过倒出时,壶要稍微摇一摇(浓度可能不均匀)。之后的状况大约与第三泡相同。 ?置茶量 至于置茶量,因茶叶的不同,置茶量也有差异。这得要试泡几次才会抓到该放多少茶叶。urban traffic structure in the urban public transport system, rail traffic with a fast, large capacity, low pollution and high efficiency, become an indispensable part of urban traffic structure, is the contradiction between supply and demand of the growing metropolis, cities, effective means to meet the needs of urban traffic. Objectives of the Washington Metro system boils down to the following three points: by driving onto the tracks at the station transfer mode in order to alleviate traffic congestion; For those who will not or cannot drive the person with a better option than conventional public transit; Block highway 一般的七子饼、茶砖,置茶量约为壶容量的四分之一即可。沱茶,少一点。散茶,很极端的,要自己试试看。如果一两人喝,置茶量可以更少。这样想好象有点「无耻」,所以我讲一下基本原则:置茶量足够,风味呈现较为容易,但是一些瑕疵容易泡出,这时就需要很专心的泡;置茶量少些,泡茶时不需放太多的精神,甚至温度、浸泡时间不要相差太大都可以勉强接受;置茶量不足,风味呈现不易,但是朋友聊天时,最好将置茶量降低一倍左右,聊天聊得忘了倒茶时间也没关系。 ?紧结茶特性 在紧结茶中(沱、饼、砖),冲泡到某一泡后,会整个散开(一般,紧结茶将他抖散容易出现一些该浓稠的不够浓稠、刺激性的味道反而容易跑出)。如果置茶量多,水一冲,就该倒出了,否则浓度会太高。一般置茶量,浸泡时间也不应太久、泡与泡之间的停顿也不应太久,这主要是为了浓度不让它太高的处理方式。当然,可以摇一下壶,将水倒出看看浓度如何。紧结茶一散开,溶解速度很快。在控制茶汤浓度上,紧结茶散开必须注意。 ?茶汤风味问题 在风味问题,一定要提一下。依上述的说法,风味,好象是控制浓度的问题,事实上,要将那种浓稠的底泡出,需要“浸泡时间”。所以除了温度要控制得当之外,浸泡时间不能过短。所以,置茶量可以少一些,泡与泡之间的时间长一点(但是壶温降得太低就没有用了)。如果泡与泡之间的浸泡时间够,茶叶量也够,后一泡冲沸水,只是把壶中溶解出来的东西带出来而已。 ?最后一泡了吗, 茶叶越陈年、烘焙越重,能冲泡的次数会缩短,但是溶解速度快。所以陈年潽洱通常熬不过七泡(一般泡法),当你一冲茶,等个20,40秒出茶时,浓度如果不够,注定就是最后一泡了。 ?真的是最后一泡了吗, 您相信前述的最后一泡后,还能再泡出一泡精华茶汤来吗,在这里顺便谈一下陈年潽洱真正的最后一泡茶:当前一泡正常冲泡下的所谓最后一泡茶汤倒出以后,别急着倒掉茶渣,请您再来一泡试试;用沸水粗水低冲,放着,聊天,让茶汤在壶中降到约略为室温时再倒出,至少半小时以上。或许能熬出该有的质地,如果浓度控制得当,夏天,就是最后一泡最好喝,我称它“精华茶汤”。 ?再谈降温 年份20以下或15年以下的干仓熟茶体潽洱,温度太高不佳。酸味太过的潽洱,细水高冲的降温会减免酸味,但是如果风味没了,降温也失去本来需要的风味 。若是生茶体,年份5年以下,沸水倒入茶海,即刻再倒入另一茶海,再倒入茶海,再倒入壶中或盖杯中(这是三次降温)。生茶体20,40年,一次降温。反正原则就是,涩味、单宁、酸要降低,降温可以得到效果。温度太低,风味不出。但话说回来了,如果青潽洱用沸水而不用降温来冲泡,要我喝~惧怕~ urban traffic structure in the urban public transport system, rail traffic with a fast, large capacity, low pollution and high efficiency, become an indispensable part of urban traffic structure, is the contradiction between supply and demand of the growing metropolis, cities, effective means to meet the needs of urban traffic.
